A langue de chat is a French baked cookie
With a light texture that easily melts in your mouth. 
The dough is made by mixing equal amounts of sugar and butter that has softened at room temperature, and adding flour, egg white and vanilla. The dough is formed into long, thin bars and baked in the oven. And the crisp Shiroi Koibito is ready.

In making the cookies, we pay the utmost attention to each process, even the simplest ones. If the fresh cream is added to the dough even slightly too early or late, the cookies won’t have the same texture.

Did you know that the mountain on the Shiroi Koibito cookie box is Mt. Rishiri, one of the most beautiful mountains in Hokkaido?
When the then-president of Ishiya visited Rishiri Island, he was impressed by the massive Mt. Rishiri, which looked to him like a Swiss mountain.
At the time, he was planning to make European-style cookies, so he decided to put a drawing of Mt. Rishiri on the box.
